At Matsunoshita, we craft sushi that showcases the rich bounty of the Hokuriku region’s seasonal seafood. From delicate rockfish and prized blackthroat seaperch to buttery yellowtail and succulent salmon from the west coast of the Noto Peninsula, each piece highlights the unparalleled flavors of these pristine waters.
Served in both nigiri and makimono styles, our sushi is elevated by perfectly seasoned rice infused with a distinctive black vinegar, creating a depth of flavor unique to Matsunoshita. For those eager to indulge, we offer a 60-minute all-you-can-eat course for both lunch and dinner—ensuring every guest leaves fully satisfied.
Begin your dining experience with a selection of appetizers, featuring exquisite sashimi and small sushi dishes like Hokuriku sweet shrimp, marinated in homemade koji, and pickled Japanese fluvial sculpin wrapped in kelp.
This is follwed by a 60-minute all-you-can-eat buffet, where you can explore over 20 different ingredients, including nigiri, gunkan, and maki sushi.
